- • 1 tbsp Rosemary, fresh
- • 4 lbs Yellow potatoes

- • 1/2 tsp Baking soda
- • 1/4 tsp Black pepper, freshly-cracked
- • 1/4 tsp Flakey sea salt
- • 2 tbsp Kosher salt

- • 1 tbsp Olive oil, extra-virgin
Directions:
- Preheat the Oven
Preheat your oven to 425℉ (220℃). Place a large baking sheet in the oven to heat up—this helps achieve a crispier texture. - Prepare the Potatoes
In a large pot, add the potato chunks and cover them with cold water. Add a generous pinch of salt, then bring the pot to a boil. Cook the potatoes for about 5-7 minutes until they’re just tender but still firm. Drain and let them steam dry for a few minutes. - Toss with Seasonings
In a large bowl, toss the potatoes with olive oil, smashed garlic, chopped rosemary, salt, and black pepper until evenly coated. - Roast the Potatoes
Carefully remove the hot baking sheet from the oven and spread the seasoned potatoes out in a single layer. Roast for 25-30 minutes, then flip the potatoes and roast for another 20-25 minutes, until golden brown and crispy on all sides. - Garnish and Serve
Remove from the oven, discard the garlic cloves, and sprinkle with fresh parsley if desired. Serve hot and enjoy!
