Spanakorizo – Greek Spinach Rice

Spanakorizo, or Greek spinach rice, is a classic vegetarian dish that combines tender spinach with fragrant rice, brightened with fresh herbs and a hint of lemon. It’s light yet satisfying and works beautifully as a main meal or a side dish. Packed with nutrients and Mediterranean flavors, it’s a wholesome addition to any table.

Ingredients

  • 500 g (1 lb) fresh spinach (roughly chopped)
  • 1 cup (200 g) medium-grain rice (like arborio or short-grain)
  • 1 medium onion (finely chopped)
  • 2-3 spring onions (finely chopped)
  • 2-3 tablespoons olive oil
  • 1/4 cup (60 ml) tomato paste (optional, for a richer flavor)
  • 3 cups (720 ml) vegetable stock or water
  • 1/4 cup fresh dill (chopped)
  • 1/4 cup fresh parsley (chopped)
  • Juice of 1 lemon
  • Salt and pepper, to taste
  • Optional: crumbled feta cheese, for serving

Directions

  1. Sauté the Aromatics:
    • Heat olive oil in a large pot or deep skillet over medium heat. Add the chopped onion and spring onions, sautéing until softened and fragrant.
  2. Cook the Spinach:
    • Add the spinach to the pot, stirring gently until it wilts down. If using tomato paste, stir it in at this stage.
  3. Add the Rice:
    • Mix the rice into the pot, ensuring it is evenly coated with the spinach mixture.
  4. Simmer with Stock:
    • Pour in the vegetable stock or water. Season with salt and pepper. Cover the pot and simmer on low heat until the rice is tender and has absorbed most of the liquid (about 20 minutes). Stir occasionally to prevent sticking.
  5. Add Fresh Herbs and Lemon:
    • Once the rice is cooked, remove the pot from heat. Stir in the dill, parsley, and lemon juice, adjusting seasoning to taste.
  6. Serve:
    • Spoon the Spanakorizo onto plates and, if desired, top with crumbled feta for an extra touch of creaminess.
