Ingredients

- 2 cups (250g) all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon

- 1/2 cup (100g) granulated sugar
- 1/2 cup (100g) brown sugar, packed
- 2 large eggs
- 1/2 cup (120ml) vegetable oil
- 1 teaspoon vanilla extract
- 1/4 cup (60ml) milk
- 1 cup (250g) mashed ripe bananas (about 2 large bananas)
- 1/2 cup (120g) crushed pineapple, drained
- 1/2 cup (60g) chopped pecans or walnuts (optional)
For the Cream Cheese Glaze:
- 4 oz (115g) cream cheese, softened
- 1/2 cup (60g) powdered sugar
- 1 teaspoon vanilla extract
- 1–2 tablespoons milk (to thin, as needed)
Directions
- Prepare the Oven and Pans:
- Preheat the oven to 350°F (175°C). Grease and flour a mini loaf pan or line with parchment paper.
- Mix the Dry Ingredients:
- In a medium bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg. Set aside.
- Prepare the Wet Ingredients:
- In a large bowl, beat the granulated sugar, brown sugar, and eggs until light and smooth. Add the oil, vanilla extract, and milk, mixing until combined.
- Combine and Add Flavors:
