Easy Pizza Pasta Skewers

These mini quiche bites are a sophisticated yet simple appetizer, perfect for entertaining or as a savory snack. Ingredients:

  • 1 package of phyllo dough (thawed, about 12 sheets)
  • 2 tbsp melted butter (for brushing the phyllo)
  • 4 large eggs
  • 1/2 cup heavy cream or whole milk
  • 1/2 cup grated cheese (cheddar, Swiss, or a blend)
  • 1/4 cup cooked spinach, chopped (or other veggies like mushrooms or bell peppers)
  • 1/4 cup cooked bacon or ham, chopped (optional)
  • Salt and pepper, to taste
  • 1/4 tsp garlic powder (optional)
  • Fresh herbs for garnish (such as chives or parsley, optional)

Directions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Lightly grease a mini muffin tin with cooking spray or butter.
  2. Prepare the Phyllo Crust:
    • Unroll the phyllo dough and cover with a damp cloth to prevent it from drying out. Lay one sheet of phyllo dough on a clean surface and brush it lightly with melted butter. Top with another sheet of phyllo and brush with butter again. Repeat this process for 4-5 sheets of phyllo dough, layering and buttering each sheet.
    • Once you’ve layered enough sheets, cut the phyllo dough into 2-inch squares. Press each square into the mini muffin tin, gently folding the edges to form a small crust.
  3. Make the Quiche Filling:
    • In a medium bowl, whisk together the eggs and heavy cream (or milk). Stir in the grated cheese, chopped spinach (or other vegetables), bacon or ham (if using), garlic powder, salt, and pepper.
  4. Fill the Crusts:
    • Spoon the egg mixture into each phyllo-lined muffin cup, filling each about 3/4 full.
  5. Bake:
    • Bake in the preheated oven for 15-20 minutes, or until the quiche bites are set in the center and the phyllo crust is golden brown and crispy.
  6. Cool and Serve:
    • Allow the mini quiches to cool slightly before removing them from the tin. Garnish with fresh herbs, if desired, and serve warm or at room temperature.
