  • • 1 tbsp Italian seasonings, dry
  • • 1 Sea salt and fresh ground black pepper

Oils & Vinegars

  • • 1 Ghee or avocado oil cooking spray

Dairy

  • • 1 cup Mozzarella cheese

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. Prepare the Cauliflower Steaks:
    • Slice the cauliflower into thick “steaks,” keeping the core intact to hold them together.
    • Brush both sides of the cauliflower steaks with olive oil and season with garlic powder, smoked paprika, salt, and pepper.
  3. Bake the Cauliflower:
    • Place the cauliflower steaks on the prepared baking sheet.
    • Bake for 20 minutes, flipping halfway through, until golden and slightly tender.
  4. Sauté the Mushrooms:
    • While the cauliflower is baking, heat 1 tablespoon of olive oil in a skillet over medium heat.
    • Add the sliced mushrooms and sauté until browned and tender, about 5–7 minutes. Season with a pinch of salt and pepper.
  5. Top with Cheese and Mushrooms:
    • Remove the cauliflower steaks from the oven and top each steak with a generous spoonful of sautéed mushrooms.
    • Sprinkle shredded cheese over the mushrooms.
  6. Melt the Cheese:
    • Return the baking sheet to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
  7. Serve:
    • Transfer the cheesy cauliflower mushroom steaks to a serving platter. Garnish with fresh parsley or chives if desired.

Enjoy this hearty, vegetarian-friendly dish as a main course or a delicious side! 🧀🌱
