Kkanpunggi Korean Spicy Garlic Fried Chicken

Ingredients

Meat

  • • 1 lb Chicken thighs, boneless skinless

Produce

  • • 5 cloves Garlic
  • • 1 oz Ginger
  • • 2 Green onions
  • • 1 Jalapeno
  • • 1/4 Size onion, small small

Condiments

  • • 2 tbsp Mirin
  • • 2 tbsp Oyster sauce
  • • 4 tsp Soy sauce

Baking & Spices

  • • 1 Pinch Salt & pepper
  • • 2 tbsp Sugar
  • • 3/4 cup Sweet potato starch or potato starch

Oils & Vinegars

  • • 2 tbsp Cooking oil
  • • 1 Frying oil
  • • 2 tbsp Vinegar

Other

  • • 2 Red chili or 1/3 red bell pepper, seeded and small diced

Instructions:

  1. Marinate the Chicken
    In a bowl, mix soy sauce, rice wine, minced ginger, and garlic. Add the chicken pieces, toss to coat, and let marinate for 15-20 minutes.
  2. Prepare the Chicken for Frying
    Season the marinated chicken with a bit of salt and pepper, then coat each piece in potato starch or cornstarch, shaking off excess. This coating makes the chicken extra crispy.
  3. Fry the Chicken
    In a deep skillet or pot, heat oil over medium-high heat. Once hot, carefully add the chicken pieces in batches, frying until golden and crispy, about 5-7 minutes per batch. Remove and drain on paper towels.
  4. Make the Sauce
    In a large skillet, heat 1 tbsp oil over medium heat. Add the minced garlic and cook until fragrant. Stir in gochugaru (or gochujang) and cook briefly before adding soy sauce, rice vinegar, sugar, and water. Simmer until the sauce thickens slightly, about 3-4 minutes.
  5. Combine Chicken and Sauce
    Add the fried chicken pieces to the skillet with the sauce. Toss well to coat each piece in the spicy garlic sauce. Add sliced green onions and red chili pepper for extra flavor and color. Drizzle sesame oil over the chicken before removing from heat.
  6. Serve
