My simple Zucchini Slice recipe is bound to become a family favorite! Loaded with veggies and easily customizable, it’s perfect for kids’ lunch boxes, freezer-friendly, and can be adapted to suit your taste. Includes both regular and Thermomix instructions.

- • 4 Rashers of shortcut bacon
Produce
- • 1 Brown onion
- • 1 Carrot
- • 2 cloves Garlic
- • 1 Zucchini (approximately 150 grams)
Refrigerated
- • 5 Eggs
Baking & Spices
- • 1 Salt and pepper
- • 1 cup Self raising flour
Dairy
- • 1 cup Tasty cheese
INSTRUCTIONS:
- Preheat Oven: Set your oven to 190°C (fan-forced). Line a 28 x 18cm slice tin with baking paper.
- Prepare Ingredients:
- In a jug, whisk the eggs until combined.
- Grate the cheese, onion, zucchini, and carrot.
- Mix Ingredients:
- In a large bowl, add about ¾ of the grated cheese, along with the grated zucchini, carrot, and crushed garlic.
- Add self-raising flour, bacon pieces, salt, and pepper.
- Pour in the whisked eggs and mix everything well until combined.
- Bake the Zucchini Slice:
- Pour the mixture into the prepared slice tin, spreading it evenly.
- Sprinkle a little extra grated cheese on top if desired.
- Place in the oven and bake for 35-40 minutes, or until the top is golden brown and the slice is cooked through.
- Serve: Allow to cool slightly, then slice and enjoy!
