Ingredients

  • For the Rice Paper Boats:
    • Rice paper sheets (cut into triangles or wedges)
    • Oil for frying
  • For the Hoisin Meat Filling:
    • 1 tbsp neutral oil (e.g., vegetable or canola oil)
    • 1 carrot, finely diced
    • 1 bell pepper, finely diced
    • 1 small onion, finely diced
    • 1 cup plant-based ground meat or minced mushrooms
    • 2-3 tbsp hoisin sauce
    • 1 tsp sugar (optional, for added sweetness)

Directions

  1. Prepare the Hoisin Meat Filling:
    • Heat a medium-sized pan or wok over medium heat. Add the neutral oil.
    • Sauté the diced carrot, bell pepper, and onion for 3-4 minutes until the carrot is tender.
    • Add the plant-based ground meat or minced mushrooms. Season with hoisin sauce and sugar, if desired. Mix well and cook for a few more minutes. Turn off the heat and set aside.
  2. Prepare the Rice Paper Boats:
    • Cut the rice paper sheets into 6-8 triangles or wedges.
    • Heat oil in a pan or wok until it reaches around 380°F (195°C). To test the oil, add a small piece of rice paper; it should immediately sizzle and turn white.
    • Fry 3-4 rice paper triangles at a time for 3-5 seconds until they curl up and turn white. Remove from the oil and drain any excess oil. Repeat for the remaining rice paper.
  3. Assemble the Boats:
    • Scoop the hoisin meat filling onto the crispy rice paper boats just before serving to prevent them from getting soggy.
    • Serve immediately and enjoy!
