Thai Fried Bananas (gluay kaeg)

Gluay Kaeg is a popular Thai street food snack that combines the sweetness of ripe bananas with a crispy, golden coating. This deep-fried treat has a crunchy exterior and a soft, sweet interior, making it an irresistible combination of textures. Ingredients:

  • 4 ripe bananas (preferably small Thai bananas or any type of firm, slightly ripe banana)
  • 1/2 cup rice flour
  • 1/4 cup all-purpose flour
  • 2 tbsp cornstarch
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 1/4 tsp baking powder
  • 1/2 cup cold water (adjust as needed)
  • Vegetable oil (for frying)
  • Optional: Sesame seeds (for garnish)
  • Optional: Sweetened condensed milk (for serving)

Directions:

  1. Prepare the Bananas: Peel the bananas and cut them into small pieces, either halved lengthwise or into bite-sized chunks, depending on your preference.
  2. Make the Batter: In a mixing bowl, combine the rice flour, all-purpose flour, cornstarch, sugar, salt, and baking powder. Gradually add the cold water, mixing until the batter is smooth and thick, but not too runny.
  3. Heat the Oil: In a deep frying pan or wok, heat enough vegetable oil to submerge the banana pieces. Heat the oil over medium heat until it reaches about 350°F (175°C). You can test the oil by dropping a small amount of batter into it—if it bubbles and floats to the top, the oil is ready.
  4. Coat the Bananas: Dip the banana pieces into the batter, ensuring they are well coated.
  5. Fry the Bananas: Carefully place the coated bananas into the hot oil. Fry in batches to avoid overcrowding the pan. Fry for about 3-4 minutes or until the bananas are golden brown and crispy.
  6. Drain and Serve: Remove the fried bananas from the oil and drain them on paper towels to remove excess oil. If you like, sprinkle sesame seeds on top for extra crunch.
  7. Optional Serving: Serve the fried bananas warm, with a drizzle of sweetened condensed milk for added sweetness.
