Shrimp Toast

Shrimp Toast is a delicious, savory appetizer that’s a favorite in many Asian cuisines. The shrimp mixture is spread onto slices of bread and then deep-fried until crispy and golden brown. The result is a crunchy, flavorful bite with a tender shrimp filling, often served with a dipping sauce to complement its taste. It’s perfect as an appetizer for parties or as a tasty snack!

Ingredients:

  • 1/2 lb (225g) shrimp, peeled and deveined
  • 2 slices white or whole wheat bread (crusts removed)
  • 2 tablespoons mayonnaise
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sugar
  • 1/4 teaspoon ground white pepper
  • 1/4 cup finely chopped green onions (optional)
  • 1 egg (for dipping)
  • 1 cup panko breadcrumbs (for coating)
  • Vegetable oil (for frying)

Directions:

  1. Prepare the Shrimp Mixture:
    In a food processor, pulse the shrimp until finely chopped, but not pureed. Add the mayonnaise, soy sauce, sesame oil, sugar, white pepper, and green onions (if using). Pulse again until the mixture is well combined.
  2. Prepare the Bread:
    Lay out the bread slices on a flat surface and use a rolling pin to flatten them slightly. Spread an even layer of the shrimp mixture onto each slice of bread.
  3. Coat with Egg and Breadcrumbs:
    Beat the egg in a small bowl. Dip each slice of shrimp-topped bread into the egg, then coat it with panko breadcrumbs, pressing gently to adhere.
  4. Fry the Toast:
    Heat vegetable oil in a deep skillet or wok over medium-high heat. Once the oil is hot, carefully add the bread slices, shrimp side down. Fry for about 2-3 minutes on each side or until golden brown and crispy.
  5. Drain and Serve:
    Remove the shrimp toast from the oil and drain on paper towels. Cut into triangles and serve hot with a dipping sauce of your choice (like sweet chili sauce or soy sauce).
