Spicy Garlic Shiitake Mushrooms and Glass Noodles

Spicy garlic shiitake mushrooms and glass noodles combine the rich umami flavor of shiitake mushrooms with the delicate, chewy texture of glass noodles. Infused with aromatic garlic and a hint of spice, this dish brings a perfect balance of savory and zesty flavors. Ideal as a vegetarian main or a side dish, it’s quick to prepare, satisfying, and packed with depth. Ingredients:

  • 1 lb (450g) fresh shiitake mushrooms, sliced
  • 1 tablespoon vegetable oil
  • 4-5 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon chili paste or chili sauce (adjust to taste)
  • 1 teaspoon sugar
  • 6 oz (170g) glass noodles (also known as cellophane noodles or bean thread noodles)
  • 1/4 cup water or vegetable broth
  • 1 tablespoon sesame oil
  • 2 tablespoons chopped green onions
  • 1 tablespoon sesame seeds (optional)
  • Fresh cilantro leaves for garnish (optional)

Directions:

  1. Cook the glass noodles:
    • Cook the glass noodles according to the package instructions (usually by soaking in hot water for 5-10 minutes). Drain and set aside.
  2. Prepare the mushroom mixture:
    • Heat vegetable oil in a large pan or wok over medium-high heat.
    • Add the minced garlic and ginger, and sauté for about 1-2 minutes until fragrant.
    • Add the sliced shiitake mushrooms to the pan and cook for 4-5 minutes, stirring occasionally, until they begin to soften and release their juices.
  3. Add flavorings:
    • Stir in the soy sauce, rice vinegar, chili paste, and sugar. Mix well and cook for another 2-3 minutes, allowing the mushrooms to absorb the sauce.
  4. Combine noodles and mushrooms:
    • Add the cooked glass noodles to the pan with the mushrooms and toss gently to combine.
    • Pour in the sesame oil and water or vegetable broth, stirring to ensure everything is coated in the sauce. Cook for another 2-3 minutes to heat everything through.
  5. Garnish and serve:
    • Remove from heat and stir in the chopped green onions.
    • Garnish with sesame seeds and fresh cilantro leaves if desired.
    • Serve immediately while hot, and enjoy the delightful balance of spicy, garlicky mushrooms with chewy glass noodles!
