Falafel Scotch Eggs

A unique twist on the classic Scotch egg, these Falafel Scotch Eggs are a fusion of crispy chickpea-based falafel and traditional boiled eggs. The falafel coating gives these eggs a flavorful, spiced crunch, while the egg inside remains soft and creamy. Perfect for snacking, as an appetizer, or for a picnic.

Ingredients:

  • 4 large eggs (boiled)
  • 1 ½ cups canned chickpeas (drained and rinsed)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • ½ teaspoon paprika
  • ¼ teaspoon ground black pepper
  • Salt, to taste
  • 2 tablespoons flour (for binding)
  • ½ cup breadcrumbs (for coating)
  • 2 tablespoons olive oil (for sautéing)
  • 2 eggs (for coating)
  • 1 cup breadcrumbs (for final coating)
  • Oil for deep frying

Directions:

  1. Prepare the Boiled Eggs:
    • Place the eggs in a saucepan and cover with cold water.
    • Bring to a boil over medium-high heat. Once boiling, lower the heat and simmer for 8-10 minutes.
    • Remove the eggs, cool them in ice water, then peel and set aside.
  2. Prepare the Falafel Mixture:
    • In a food processor, blend the chickpeas, onion, garlic, parsley, cumin, coriander, paprika, black pepper, and salt until smooth.
    • Add flour and ½ cup breadcrumbs to help bind the mixture. Pulse a few times until combined.
    • If the mixture feels too wet, add a little extra flour or breadcrumbs until it’s workable.
  3. Assemble the Scotch Eggs:
    • Divide the falafel mixture into 4 equal portions.
    • Flatten one portion in the palm of your hand and wrap it around a peeled boiled egg, ensuring the egg is completely coated.
    • Repeat with the remaining eggs.
  4. Coat and Fry:
    • In a shallow bowl, whisk the 2 remaining eggs.
    • In another bowl, place 1 cup of breadcrumbs.
    • Dip each falafel-wrapped egg into the beaten eggs, then coat thoroughly with breadcrumbs.
    • Heat oil for deep frying in a deep pan over medium heat.
    • Fry the Scotch eggs in batches for 4-5 minutes, or until golden and crispy. Remove them and drain on paper towels.
  5. Serve:
    • Allow the Falafel Scotch Eggs to cool slightly before serving.
    • Serve them with a side of yogurt or your favorite dipping sauce.

Enjoy these flavorful, crunchy, and satisfying snacks!
