Dan Bing – Classic Taiwanese Egg Roll

Dan Bing, also known as the Taiwanese egg roll, is a popular street food in Taiwan that is both delicious and satisfying. This savory dish consists of a thin, crepe-like egg pancake filled with a variety of savory ingredients, usually including eggs, green onions, and sometimes additional fillings like cheese, bacon, or sausage. The egg pancake is folded around the fillings, creating a delightful combination of soft, fluffy egg and crispy edges. Dan Bing is typically enjoyed for breakfast or as a snack, often paired with soy sauce or chili sauce for an extra punch of flavor.

Ingredients:

For the egg pancake:

  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1/4 cup water
  • 1 tablespoon vegetable oil
  • Pinch of salt
  • 1/4 cup chopped green onions (optional)

For the filling (optional):

  • 2 slices of cooked bacon (optional)
  • 1/4 cup grated cheese (optional)
  • 1-2 tablespoons hoisin sauce or soy sauce (for dipping)

Directions:

  1. Prepare the egg pancake mixture:
    • In a bowl, whisk the eggs, flour, water, and a pinch of salt until smooth. The consistency should be similar to pancake batter.
    • Stir in the chopped green onions (if using) for added flavor.
  2. Cook the egg pancake:
    • Heat a non-stick skillet or frying pan over medium heat and add 1 tablespoon of vegetable oil.
    • Pour a portion of the egg mixture into the skillet, swirling to evenly coat the bottom of the pan. The layer should be thin but cover the surface of the pan.
    • Cook the egg pancake for 1-2 minutes until the edges start to lift up, then flip it over and cook for another 1-2 minutes until fully cooked. Remove from the pan and set aside.
    • Repeat with the remaining egg mixture, adding more oil as needed.
  3. Assemble the Dan Bing:
    • If using optional fillings like bacon or cheese, place them in the center of each cooked egg pancake while still warm.
    • Fold the pancake over the fillings to create a roll or simply fold it in half.
  4. Serve:
    • Cut the Dan Bing into halves or quarters, and serve with a drizzle of hoisin sauce or soy sauce for dipping. Enjoy the crispy, savory egg roll with a flavorful bite!
