Goong Sarong (Crispy Shrimp in a Blanket)

Goong Sarong is a delectable Thai appetizer, featuring plump shrimp wrapped in a crispy golden blanket of thin noodles. The shrimp are marinated to bring out a blend of savory, sweet, and aromatic flavors, while the outer layer of noodles adds a delightful crunch. Ingredients:

  • 12 large shrimp (peeled, deveined, with tails on)

  • 1/2 teaspoon red curry paste (optional for some heat)

  • 1 cup thin rice vermicelli noodles (soaked in warm water for 10 minutes)
  • 2 tablespoons vegetable oil (for frying)

Directions:

  1. Prepare the Marinade:
    • In a bowl, mix together the coconut milk, fish sauce, lime juice, brown sugar, minced garlic, and red curry paste. Stir until the sugar dissolves and everything is well combined.
  2. Marinate the Shrimp:
    • Place the shrimp in the marinade mixture and coat well. Allow them to marinate for at least 15 minutes, or up to 30 minutes for more flavor.
  3. Prepare the Noodles:
    • After soaking the rice vermicelli noodles in warm water for about 10 minutes, drain and cut them into shorter lengths, about 3-4 inches.
  4. Wrap the Shrimp:
    • Take each marinated shrimp and wrap them individually in a bundle of soaked vermicelli noodles. Ensure the noodles are tightly wrapped around the shrimp to form a “blanket” of noodles around each piece of shrimp.
  5. Fry the Shrimp:
    • Heat the vegetable oil in a deep frying pan over medium heat. Once the oil is hot, carefully place the wrapped shrimp into the pan. Fry until golden brown and crispy, about 3-4 minutes, flipping as necessary to cook evenly on all sides.
  6. Drain Excess Oil:
    • Remove the shrimp from the oil and place them on a paper towel-lined plate to drain any excess oil.
  7. Serve:
