Honeydew Sago is a refreshing and light dessert, perfect for warm weather. This tropical treat combines the sweet, fragrant flavor of honeydew melon with chewy sago pearls in a creamy coconut milk base. The natural sweetness of the honeydew provides a fresh, fruity contrast to the richness of the coconut, while the sago pearls add a delightful texture. Often served chilled, itβs a popular dessert in many Southeast Asian countries and is easy to prepare, making it a perfect option for a light and satisfying end to any meal.

Ingredients:
- 1 ripe honeydew melon
- 1/2 cup sago pearls (tapioca pearls)
- 1 1/2 cups coconut milk
- 1/2 cup water (for cooking the sago)
- 2-3 tbsp sugar (adjust to taste)
- Pinch of salt
- Ice cubes (optional, for serving)

Directions:
- Prepare the Sago Pearls:
- In a medium pot, bring water to a boil and add the sago pearls. Reduce the heat to a simmer and cook the pearls for 10-15 minutes, stirring occasionally. The pearls should turn translucent. Be sure not to overcook them.
- Once cooked, remove the pot from the heat and let the sago sit for 5 minutes to finish cooking. Drain the sago pearls and rinse them under cold water to stop the cooking process. Set aside.
- Prepare the Honeydew Melon:
- Cut the honeydew melon in half, remove the seeds, and scoop out the flesh.
- Use a blender or food processor to puree the honeydew melon into a smooth, pulp-free liquid. If you prefer a chunkier texture, you can cut the melon into small cubes instead of pureeing it.
- Combine Coconut Milk and Sugar:
- In a small saucepan, combine the coconut milk, sugar, and a pinch of salt. Warm the mixture over low heat until the sugar dissolves completely. Stir occasionally to prevent it from boiling over. Once the sugar is dissolved, remove from heat and let it cool slightly.
- Assemble the Honeydew Sago:
- In a large mixing bowl, combine the cooked sago pearls, honeydew puree, and coconut milk mixture. Stir gently to mix all the ingredients together.
- Chill and Serve:
- Chill the dessert in the refrigerator for at least 1-2 hours to allow the flavors to meld and the sago pearls to absorb the coconut milk.
- Serve the Honeydew Sago in individual bowls or glasses, with ice cubes if desired for extra chill. You can also garnish with extra melon cubes for added texture and color.
Optional:
- For a more vibrant presentation, you can add a drizzle of extra coconut milk on top or a sprinkle of toasted coconut flakes.
This creamy, fruity dessert is both indulgent and refreshing, making it a delightful end to any meal, especially during hot summer days!
