Rack of Lamb with Butternut Squash Puree

This elegant and flavorful dish combines the tenderness of a perfectly roasted rack of lamb with the creamy sweetness of butternut squash puree. The lamb is seasoned with a blend of herbs and roasted to a perfect medium-rare, while the butternut squash puree serves as a rich and velvety side. Ingredients:

For the Rack of Lamb:

  • 1 rack of lamb (8-9 bones, frenched)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • Salt and pepper to taste
  • 1 tbsp Dijon mustard

For the Butternut Squash Puree:

  • 1 medium butternut squash, peeled and cubed
  • 2 tbsp butter
  • 1/2 cup vegetable broth (or chicken broth)
  • 1/4 tsp ground nutmeg
  • Salt and pepper to taste

Directions:

  1. Prepare the Rack of Lamb:
    • Preheat the oven to 400°F (200°C).
    • Rub the rack of lamb with olive oil, minced garlic, rosemary, thyme, salt, and pepper.
    • Heat a large skillet over medium-high heat and sear the rack of lamb on all sides until golden brown (about 3-4 minutes per side).
    • Remove the lamb from the skillet and brush the top with Dijon mustard.
    • Transfer the lamb to a baking sheet and roast in the preheated oven for 20-25 minutes for medium-rare, or longer depending on desired doneness.
    • Let the lamb rest for 5-10 minutes before slicing.
  2. Make the Butternut Squash Puree:
    • In a large pot, add the cubed butternut squash and cover with water. Bring to a boil and cook until the squash is tender (about 15-20 minutes).
    • Drain the squash and return it to the pot. Add the butter, vegetable broth, nutmeg, salt, and pepper. Use an immersion blender or transfer to a food processor to blend until smooth.
    • Adjust seasoning as needed.
  3. Assemble the Dish:
    • Spoon a generous portion of the butternut squash puree onto the center of each plate.
    • Arrange the sliced rack of lamb on top of the puree.
    • Garnish with fresh herbs or a drizzle of balsamic reduction if desired.
