A sophisticated Mediterranean dish featuring tender grilled octopus served atop a smooth fava bean purée, complemented by a vibrant fennel and onion relish. This modern Greek dish combines traditional flavors with contemporary presentation, offering a perfect balance of textures and tastes. It’s one of Mazi London’s signature dishes, popular in their Notting Hill restaurant.

Ingredients:

For the Octopus:

  • 1 whole octopus
  • 1/2 white onion
  • 2 celery ribs
  • 2 carrots
  • Fresh flat-leaf parsley
  • 4 garlic cloves
  • 1 teaspoon peppercorns
  • 1/2 lemon
  • Olive oil for grilling
  • Salt and pepper to taste

For the Fava Purée:

  • Yellow split fava beans
  • Garlic
  • Olive oil
  • Salt and pepper
  • Lemon juice

For the Fennel and Onion Relish:

  • Fresh fennel bulb, finely sliced
  • White onions
  • White balsamic vinegar
  • Extra virgin olive oil
  • Fresh herbs (such as chives)
  • Salt and pepper to taste

Directions:

  1. Prepare the Octopus:
    • Clean the octopus thoroughly
    • In a large pot, combine octopus with onion, celery, carrots, parsley, garlic, peppercorns, and lemon
    • Add water and bring to a simmer
    • Cook for 45-90 minutes until tender
    • Let cool to room temperature
    • Separate the tentacles
  2. Grill the Octopus:
    • Brush octopus tentacles with olive oil
    • Season with salt and pepper
    • Grill until slightly charred and crispy on the outside (about 3-4 minutes)
  3. Make the Fava Purée:
    • Cook split fava beans until tender
    • Blend with garlic, olive oil, and lemon juice
    • Season with salt and pepper
    • Process until smooth and creamy
  4. Prepare the Fennel and Onion Relish:
    • Finely slice fennel using a mandoline
    • Combine with prepared onions
    • Dress with white balsamic vinegar and olive oil
    • Season with salt and pepper
    • Add fresh herbs
  5. Plate the Dish:
    • Spread the fava purée on the plate
    • Place grilled octopus tentacles on top
    • Add the fennel and onion relish
    • Garnish with fresh herbs
    • Finish with a drizzle of extra virgin olive oil
