Ingredients

For the Pimento Cheese:

  • 8 ounces cream cheese, softened
  • 1 cup sharp cheddar cheese, grated
  • 1/2 cup pimentos, drained and chopped
  • 1/4 cup mayonnaise
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • Salt and freshly ground black pepper, to taste

For Coating:

  • 1 cup finely chopped pecans, walnuts, or almonds (or a mix)
  • 1/4 cup fresh parsley, finely chopped (optional)
  • 1/4 teaspoon smoked paprika (optional)

Directions

1. Prepare the Pimento Cheese Mixture:

  • In a medium mixing bowl, combine the softened cream cheese, grated sharp cheddar cheese, chopped pimentos, mayonnaise, Worcestershire sauce, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
  • Mix well until all ingredients are thoroughly combined and the mixture is smooth. You can use a hand mixer or a spatula for this step.

2. Chill the Mixture:

  • Cover the bowl with plastic wrap and refrigerate the pimento cheese mixture for at least 30 minutes. This will make it easier to form into balls.

3. Form the Cheese Balls:

  • Once chilled, use a small cookie scoop or your hands to form the cheese mixture into small balls, about 1 inch in diameter. Place the formed balls on a parchment-lined baking sheet.

4. Prepare the Coating:

  • In a shallow dish, combine the chopped nuts, parsley (if using), and smoked paprika (if using). Mix well to combine.

5. Coat the Cheese Balls:

  • Roll each cheese ball in the nut mixture, pressing gently to ensure the coating adheres well. Place the coated cheese balls back on the baking sheet.

6. Chill Again:

  • Once all the cheese balls are coated, return them to the refrigerator for at least 15-20 minutes to firm up before serving.

7. Serve:

  • Arrange the mini pimento cheese balls on a serving platter. Serve with an assortment of crackers, fresh vegetables, or toothpicks for easy eating.

Enjoy these Mini Pimento Cheese Balls as a flavorful and fun appetizer that will be a hit at any gathering!
