Crab doughnuts

Ingredients

For the Doughnuts:

  • 2 1/2 cups all-purpose flour
  • 1 tbsp sugar
  • 1 tsp salt
  • 2 1/4 tsp (1 packet) active dry yeast
  • 3/4 cup warm milk (110°F/43°C)
  • 2 tbsp unsalted butter, melted
  • 1 large egg
  • Vegetable oil for frying

For the Crab Filling:

  • 200g fresh crab meat, picked over for shells
  • 2 tbsp cream cheese, softened
  • 2 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp lemon juice
  • 1/4 tsp smoked paprika
  • Salt and pepper to taste
  • 1 tbsp finely chopped chives or parsley

For Garnish:

  • Lemon zest
  • Extra chives or parsley, finely chopped
  • A small dollop of caviar (optional)

Directions

Step 1: Prepare the Doughnuts

  1. In a small bowl, combine the warm milk, sugar, and yeast. Let sit for 5–10 minutes until frothy.
  2. In a large bowl, mix the flour and salt. Add the yeast mixture, melted butter, and egg, and mix until a soft dough forms.
  3. Knead the dough on a lightly floured surface for 5–7 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.
  4. Punch down the dough and roll it out to about 1/2-inch thickness. Use a round cutter (2–3 inches in diameter) to cut out circles. Let the dough rounds rest for 15 minutes.

Step 2: Fry the Doughnuts

  1. Heat vegetable oil in a deep pan or fryer to 350°F (175°C).
  2. Fry the doughnuts in batches, 1–2 minutes per side, until golden brown. Drain on paper towels and let cool slightly.

Step 3: Prepare the Crab Filling

  1. In a bowl, mix the crab meat, cream cheese, mayonnaise, Dijon mustard, lemon juice, smoked paprika, salt, pepper, and chives until well combined. Adjust seasoning to taste.
  2. Transfer the filling to a piping bag fitted with a small round tip or use a small spoon for filling.

Step 4: Assemble the Crab Doughnuts

  1. Using a small knife, make a hole on the side of each doughnut.
  2. Pipe or spoon the crab filling into the center of each doughnut.
  3. Garnish with lemon zest, chopped chives, and a dollop of caviar if desired.

Step 5: Serve

  1. Arrange the doughnuts on a serving platter and serve warm or at room temperature.
  2. Pair with a crisp white wine or sparkling beverage for an elegant touch.
