  • • 1 1/2 lbs Salmon, whole fillet

Directions for Salmon Piccata

  1. Prepare the Salmon: Pat the salmon fillets dry and season with salt and pepper on both sides. Lightly dust each fillet with flour, shaking off any excess.
  2. Sear the Salmon: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Place the salmon fillets skin-side up and cook for about 3-4 minutes per side, or until golden brown and cooked to your liking. Remove salmon from the skillet and set aside.
  3. Make the Sauce: In the same skillet, reduce heat to medium. Add 1 tablespoon of butter, 2 cloves of minced garlic, and cook for about 30 seconds until fragrant. Add 1/2 cup of dry white wine (or chicken broth) and let it simmer for 2-3 minutes until slightly reduced.
  4. Add Lemon and Capers: Stir in the juice of one lemon and 2 tablespoons of capers, simmering for an additional minute to meld the flavors.
  5. Finish the Sauce: Return the salmon fillets to the skillet, spooning the sauce over the top. Let them warm through for 1-2 minutes.
