Parmesan-Herb Madeleines

Parmesan-Herb Madeleines are savory twists on the classic French treat. These fluffy, shell-shaped bites are infused with the rich, nutty flavor of Parmesan and aromatic herbs. Perfect for an elegant appetizer or a cozy snack, they pair beautifully with soups, salads, or even a glass of wine.

Ingredients:

  • 3/4 cup (95g) all-purpose flour
  • 1 teaspoon baking powder
  • A pinch of salt and freshly ground black pepper
  • 1/4 cup (25g) grated Parmesan cheese
  • 1 tablespoon finely chopped fresh herbs (like thyme, rosemary, or parsley)
  • 2 large eggs
  • 1/3 cup (80ml) unsalted butter, melted and slightly cooled
  • 1 tablespoon milk

Directions:

  1. Preheat oven and prepare pan: Preheat your oven to 375°F (190°C). Grease a madeleine pan with butter or nonstick spray.
  2. Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, salt, pepper, Parmesan, and herbs.
  3. Prepare wet ingredients: In a separate bowl, beat the eggs until frothy. Stir in the melted butter and milk.
  4. Combine mixtures: Gradually add the dry ingredients to the wet mixture, folding gently until just combined. Be careful not to overmix.
  5. Fill the pan: Spoon the batter into the prepared madeleine pan, filling each shell cavity about 3/4 full.
  6. Bake and cool: Bake for 10-12 minutes, or until the edges are golden and the madeleines spring back when touched. Allow them to cool slightly before removing from the pan.
