- 1 tablespoon vegetable oil
- 4-5 cloves garlic, minced

- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon chili paste or chili sauce (adjust to taste)
- 1 teaspoon sugar
- 6 oz (170g) glass noodles (also known as cellophane noodles or bean thread noodles)
- 1/4 cup water or vegetable broth
- 1 tablespoon sesame oil
- 2 tablespoons chopped green onions
- 1 tablespoon sesame seeds (optional)
- Fresh cilantro leaves for garnish (optional)






Directions:
- Cook the glass noodles:
- Cook the glass noodles according to the package instructions (usually by soaking in hot water for 5-10 minutes). Drain and set aside.
- Prepare the mushroom mixture:
- Heat vegetable oil in a large pan or wok over medium-high heat.
- Add the minced garlic and ginger, and sauté for about 1-2 minutes until fragrant.
- Add the sliced shiitake mushrooms to the pan and cook for 4-5 minutes, stirring occasionally, until they begin to soften and release their juices.
