  • 2 boiled eggs (sliced)
  • 1 tablespoon vegetable oil

For the Curry Sauce:

  • 2 tablespoons curry powder (preferably Malaysian or Indian-style)
  • 1 tablespoon chili paste (adjust to desired spice level)
  • 1 tablespoon turmeric powder
  • 1 tablespoon sugar
  • 1 tablespoon fish sauce
  • 1/2 cup coconut milk
  • 2 cups chicken stock (or water)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • Salt to taste

Directions:

  1. Prepare the Curry Sauce:
    • Heat 1 tablespoon of vegetable oil in a saucepan over medium heat. Add the chopped onion and minced garlic, sautéing until they become soft and fragrant.

    • If using store-bought Chee Cheong Fun, simply steam the rice noodle rolls according to the package instructions until they are soft and tender.
    • If making homemade Chee Cheong Fun, prepare the rice flour batter, steam the thin layers into noodles, and roll them into tubes.
  3. Assemble the Dish:
    • Place the steamed Chee Cheong Fun rolls on a serving plate, then pour the hot curry sauce generously over the noodles.
    • Add the cooked chicken, shrimp, and sliced boiled eggs on top or alongside the rice rolls, as desired.
  4. Serve:
