Ingredients

For the Halibut:

  • 4 Northern halibut fillets (about 6 ounces each)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Juice of 1 lemon
  • Fresh herbs (such as dill or parsley) for garnish

For the Squash Ribbons:

  • 1 medium zucchini
  • 1 medium yellow squash
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Zest of 1 lemon
  • 1 tablespoon fresh lemon juice

For Serving:

  • Lemon wedges (optional)
  • Additional fresh herbs for garnish

Directions

  1. Prepare the Squash Ribbons:
    • Using a vegetable peeler or mandoline, slice the zucchini and yellow squash into thin ribbons. Set aside.
    • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
    • Add the squash ribbons to the skillet, season with salt and pepper, and sauté for about 3-4 minutes until just tender. Remove from heat and stir in the lemon zest and lemon juice. Set aside.
  2. Cook the Halibut:
    • Pat the halibut fillets dry with paper towels and season both sides with salt and pepper.
    • In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once the oil is hot, carefully add the halibut fillets to the skillet.
    • Cook for about 4-5 minutes on one side until golden brown and crispy. Carefully flip the fillets and cook for an additional 3-4 minutes on the other side, or until the fish is cooked through and flakes easily with a fork.
    • Squeeze fresh lemon juice over the fillets just before removing them from the skillet.
  3. Assemble the Dish:
    • On each plate, place a generous portion of the sautéed squash ribbons. Top with a halibut fillet.
    • Garnish with fresh herbs and serve with lemon wedges on the side for an extra burst of flavor.
