Lobster & zucchini dish

This Lobster & Zucchini dish is a delightful seafood entrée that features succulent lobster meat paired with tender zucchini. The dish is light yet flavorful, making it perfect for a summer dinner or a special occasion. The lobster is sautéed to perfection and combined with sautéed zucchini, garlic, and a hint of lemon, creating a harmonious blend of flavors. Ingredients

  • For the Lobster:
    • 2 lobster tails (about 6-8 ounces each)
    • 2 tablespoons olive oil
    • 2 cloves garlic, minced
    • 1 teaspoon red pepper flakes (optional)
    • Salt and pepper to taste
    • Juice of 1 lemon
    • Fresh parsley, chopped (for garnish)
  • For the Zucchini:
    • 2 medium zucchinis, sliced into half-moons
    • 1 tablespoon olive oil
    • 1 clove garlic, minced
    • Salt and pepper to taste
    • 1/4 cup grated Parmesan cheese (optional)

Directions

  1. Prepare the Lobster:
    • Preheat your oven to 350°F (175°C).
    • Using kitchen scissors, carefully cut the top of the lobster shells lengthwise to expose the meat. Remove the meat and chop it into bite-sized pieces.
    • In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 30 seconds until fragrant.
    • Add the lobster meat to the skillet, season with salt and pepper, and cook for about 3-4 minutes until the lobster is opaque and cooked through. Squeeze lemon juice over the lobster and remove from heat.
  2. Sauté the Zucchini:
    • In another skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced zucchini and sauté for about 5-7 minutes until tender but still slightly crisp.
    • Add the minced garlic, season with salt and pepper, and cook for an additional 1-2 minutes. If desired, sprinkle grated Parmesan cheese over the zucchini and stir until melted.
  3. Combine and Serve:
    • Gently fold the sautéed lobster into the zucchini mixture, allowing the flavors to meld for a minute.
    • Serve the lobster and zucchini mixture warm, garnished with fresh parsley. This dish can be served on its own or over a bed of pasta or rice for a heartier meal.
