Ingredients:
For the Courgettes:
- 4 medium courgettes (zucchini), halved lengthwise
- 1 tbsp olive oil
- Salt and black pepper to taste
For the Filling:
- 1 cup feta cheese, crumbled
- ½ cup breadcrumbs
- 1 clove garlic, minced
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh dill, chopped
- 1 egg, beaten
- Zest of 1 lemon
- 2 tbsp olive oil
For Garnish:
- Fresh parsley or dill sprigs
- A drizzle of olive oil (optional)
Directions:
- Prepare the Courgettes:
- Preheat the oven to 375°F (190°C).
- Scoop out the flesh of each courgette half with a spoon, leaving a thin border to form a boat. Reserve the scooped-out flesh and chop it finely.
- Lightly brush the courgette halves with olive oil and season with salt and pepper. Arrange them on a baking dish.
- Make the Filling:
- In a bowl, mix the chopped courgette flesh with the crumbled feta cheese, breadcrumbs, garlic, parsley, dill, beaten egg, lemon zest, and olive oil. Season with a little salt and black pepper, being mindful of the saltiness of the feta.
- Stuff the Courgettes:
- Spoon the filling into the hollowed-out courgette halves, pressing gently to pack the mixture in evenly.
- Bake:
- Bake in the preheated oven for 20–25 minutes, or until the courgettes are tender and the filling is golden and set.
- Garnish and Serve:
- Remove the courgettes from the oven and let them cool slightly.
- Garnish with fresh parsley or dill sprigs and a drizzle of olive oil, if desired.
