Ingredients

For the Curry Broth:

Directions

Step 1: Prepare Curry Paste

  • Toast and grind spices like turmeric, coriander, and cumin.
  • Blend these with red curry paste, garlic, shallots, and ginger to form a thick paste.

Step 2: Cook the Chicken

  1. Heat a large pot or wok over medium heat.
  2. Fry the curry paste in a little oil until fragrant (about 2–3 minutes).
  3. Add a portion of the coconut milk and simmer until the oil separates on the surface (this enhances the richness of the dish).
