Roasted Cauliflower Steaks

Looking for a delicious vegetarian or vegan main course? Roasted cauliflower steaks are the perfect choice! They pair wonderfully with a variety of sauces and make a healthy, satisfying meal. Cauliflower has become a go-to nutritious substitute for grains, especially for those seeking a low-carb option or following Paleo or Whole30 diets. If you’re aiming for a meatless meal or are on a plant-based diet, this recipe is a fantastic way to bring something new and flavorful to the table.

Ingredients

Produce

  • • 2 heads Cauliflower
  • • 1/2 tsp Garlic powder
  • • 1 tsp Parsley

Baking & Spices

  • • 1/2 tsp Black pepper
  • • 1 tsp Kosher salt
  • • 1/2 tsp Paprika

Oils & Vinegars

  • • 1/4 cup Olive oil

Instructions

Preheat the Oven
Adjust the oven rack to the lower third position and preheat to 500ºF (260ºC).

Slice the Cauliflower
Remove the green leaves from the cauliflower and trim the stem. Using a large knife, slice the cauliflower in half lengthwise through the center. Cut a 1 ½-inch thick “steak” from each half. If the cauliflower head is large, you may be able to cut an additional steak from each half. Repeat with the second head of cauliflower, aiming for about 4 to 8 pieces total. Place the steaks on a rimmed baking sheet, trimming any loose florets.

Prepare the Seasoning
In a small bowl, mix together salt, pepper, garlic powder, and paprika.

Season the Cauliflower
Drizzle olive oil over both sides of each cauliflower steak, then evenly sprinkle the seasoning on each side, about ¼ teaspoon per side.

Roast the Cauliflower
Cover the baking sheet tightly with foil and bake for 5 minutes. Remove the foil and roast for an additional 10 minutes. Carefully flip each piece, then continue roasting until a golden brown crust forms, about 6 to 8 more minutes.

To Serve
Transfer the roasted cauliflower steaks to a serving platter and garnish with parsley. Enjoy!
