Ingredients

  • For the Daikon Roll-Ups:
    • 1 large daikon radish, peeled

  • For the Miso Mint Pea Filling:
    • 1 cup fresh or frozen peas, thawed
    • 2 tablespoons white miso paste
    • 1 tablespoon fresh mint leaves, chopped
    • 1 tablespoon lemon juice
    • 1 tablespoon olive oil
    • Salt and pepper to taste

Directions

  1. Prepare the Daikon:
    • Using a mandoline or a sharp knife, slice the daikon radish into thin, long strips. The strips should be flexible enough to roll without breaking.
  2. Make the Filling:
    • In a food processor, combine the peas, miso paste, mint leaves, lemon juice, and olive oil. Blend until smooth.
    • Season with salt and pepper to taste.
  3. Assemble the Roll-Ups:
    • Place a small spoonful of the miso mint pea filling at one end of a daikon strip.
    • Roll the daikon strip around the filling, securing it with a toothpick if necessary.
    • Repeat with the remaining daikon strips and filling.
  4. Garnish and Serve:
    • Sprinkle the roll-ups with sesame seeds if desired.
    • Arrange the roll-ups on a serving platter and serve immediately.
