Spinach pie tee

Ingredients

  • For the Pie Tee Shells:
    • 1 cup all-purpose flour
    • 1/2 cup rice flour
    • 1/4 cup cornstarch
    • 1 egg
    • 1 cup water

    • 300 grams fresh spinach, washed and chopped
    • 1 small onion, finely chopped
    • 2 cloves garlic, minced
    • 1 tablespoon olive oil

Directions

  1. Prepare the Pie Tee Shells:
    • In a bowl, mix the all-purpose flour, rice flour, cornstarch, egg, water, and salt until you get a smooth batter.
    • Heat oil in a deep frying pan to 170°C (340°F).
    • Dip a Pie Tee mold into the hot oil to heat it up, then dip it into the batter, ensuring the batter coats the mold evenly.
    • Place the mold back into the hot oil and fry until the shell is golden brown and crispy. Gently remove the shell from the mold and drain on paper towels. Repeat with the remaining batter.
  2. Prepare the Spinach Filling:
    • Heat olive oil in a pan over medium heat. Add the chopped onion and garlic, and sauté until fragrant and translucent.
    • Add the chopped spinach to the pan and cook until wilted. Season with salt and pepper to taste.
    • If using, stir in the grated Parmesan cheese until melted and well combined. Remove from heat and let it cool slightly.
  3. Assemble the Spinach Pie Tee:
    • Fill each Pie Tee shell with a spoonful of the spinach mixture.
