Shanghai Sesame Pancakes (上海大饼)

Shanghai Sesame Pancakes (also known as Shanghainese Da Bing) are a popular Chinese street food and breakfast item, famous for their crispy, flaky texture and savory flavor. These pancakes are made with dough that’s rolled with a generous amount of sesame seeds and sometimes a hint of five-spice powder, which creates layers of crispness as it’s pan-fried. The result is a satisfying combination of chewiness and crunch, making it the perfect snack or light meal. Often served with a dipping sauce or eaten alongside pickles, they are loved for their simplicity and deliciousness.

Ingredients:

  • 2 cups all-purpose flour
  • 3/4 cup warm water (adjust as needed)
  • 1 tablespoon vegetable oil (for dough)
  • 1/2 teaspoon salt
  • 2 tablespoons sesame oil (for brushing)
  • 1/4 cup white sesame seeds
  • 1 tablespoon sugar (optional, for a slightly sweet flavor)
  • 1/2 teaspoon five-spice powder (optional)
  • 1 tablespoon vegetable oil (for frying)

Directions:

  1. Make the Dough: In a mixing bowl, combine the flour and salt. Gradually add warm water, stirring continuously to form a dough. Knead the dough for about 8-10 minutes until it becomes smooth and elastic. If the dough feels too dry, add a little more water, a tablespoon at a time. Once kneaded, cover the dough with a damp cloth and let it rest for at least 30 minutes.
  2. Prepare the Sesame Filling: In a small bowl, mix the sesame seeds, sugar (if using), and five-spice powder (if using). Set aside.
  3. Shape the Pancakes: After the dough has rested, divide it into 4 equal portions. Roll each portion into a small ball. Then, roll each ball into a thin, round flat sheet (about 8-10 inches in diameter). Brush a thin layer of sesame oil over the surface of the dough.
  4. Add Sesame Filling: Sprinkle the sesame filling evenly over the surface of the rolled dough. Roll the dough sheet up like a jelly roll or cylinder, then coil it into a spiral shape. Once coiled, flatten the spiral gently with your hands or a rolling pin, forming a thicker pancake (about 1/2 inch thick).
  5. Fry the Pancakes: Heat 1 tablespoon of vegetable oil in a skillet or frying pan over medium heat. Place the pancake in the pan and fry for about 3-4 minutes on each side until golden brown and crispy. Press down gently with a spatula to ensure even cooking. If necessary, add a little more oil for crispiness.
  6. Serve: Once the pancake is crispy and golden, remove it from the pan and drain on paper towels to remove excess oil. Cut into wedges and serve hot.
