Coconut Sticky Rice Banana Parcels

Coconut Sticky Rice Banana Parcels, also known as Khao Tom Mat in Thai cuisine, are a delicious, sweet snack made by wrapping fragrant sticky rice and banana in banana leaves. The sticky rice is cooked with coconut milk, which adds richness and flavor, while the banana adds a natural sweetness. Once wrapped and steamed, these parcels create a delightful treat that’s both comforting and refreshing, perfect for a light dessert or snack.

Ingredients:

  • 1 cup sticky rice (glutinous rice)
  • 1 can (400 ml) coconut milk
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 4 ripe bananas (preferably small or medium-sized)
  • 8-10 banana leaves (to wrap the parcels)
  • Water for soaking the sticky rice

Directions:

  1. Soak the Sticky Rice:
    • Rinse the sticky rice under cold water until the water runs clear. Soak it in water for at least 4 hours or overnight to ensure it cooks properly.
  2. Cook the Sticky Rice:
    • Drain the soaked sticky rice. In a medium pot, combine the sticky rice with coconut milk, sugar, and salt. Stir well to dissolve the sugar and salt.
    • Bring to a gentle boil over medium heat. Once it starts to boil, lower the heat to a simmer and cook the rice for about 15-20 minutes, stirring occasionally until the rice is tender and the liquid has been absorbed. Remove from heat and let it cool slightly.
  3. Prepare the Bananas:
    • Peel the bananas and cut them into halves or quarters (depending on the size of the banana and your preference).
  4. Prepare the Banana Leaves:
    • Gently heat the banana leaves over a flame or in a hot pan for a few seconds to make them pliable and easier to fold.
    • Cut the leaves into rectangles, large enough to wrap the rice and banana. You’ll need 8-10 pieces depending on the size.
  5. Assemble the Parcels:
    • Place a piece of banana leaf on a clean surface. Spoon a portion of the cooked coconut sticky rice in the center of the leaf.
    • Place a piece of banana on top of the rice.
    • Carefully fold the sides of the banana leaf over the rice and banana, then fold the ends to seal the parcel. Make sure it is securely wrapped.
  6. Steam the Parcels:
    • Arrange the wrapped parcels in a steamer, making sure they are stacked loosely to allow steam to circulate.
    • Steam the parcels for about 20-30 minutes, or until the rice is fully cooked and the parcels are fragrant.
  7. Serve:
    • Once steamed, allow the parcels to cool slightly before unwrapping. Serve warm or at room temperature.
