Gondeure Bap (Korean Thistle Rice)

is a traditional Korean dish made with rice and gondeure (thistle), which gives the rice a distinctive flavor and texture. The thistle is known for its slightly bitter taste and medicinal properties. This dish is not only nutritious but also rich in flavor, combining earthy and herbal notes with the soft texture of rice. It is typically served as a side dish or as part of a larger meal.

Ingredients:

  • 1 cup short-grain rice (sushi rice or Korean rice)
  • 1-2 cups gondeure (Korean thistle) leaves, chopped (fresh or frozen)
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic, minced
  • 1 tablespoon sesame seeds (optional)
  • 2 cups water or vegetable broth (for cooking rice)
  • Salt, to taste
  • Optional: 1 teaspoon of gochugaru (Korean red pepper flakes) for a bit of heat

Directions:

  1. Prepare the Rice: Wash the rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes to ensure it cooks evenly.
  2. Prepare the Gondeure: If using fresh gondeure, rinse the leaves thoroughly and chop them into small pieces. If using frozen gondeure, simply thaw it before use. Blanch the thistle leaves in boiling water for about 1-2 minutes, then drain and set aside.
  3. Cook the Rice: In a pot or rice cooker, combine the soaked rice with 2 cups of water or broth. Cook the rice as you would normally, using the rice cooker or stovetop method.
  4. Sauté the Gondeure: While the rice is cooking, heat sesame oil in a pan over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Add the chopped gondeure and sauté for another 2-3 minutes, allowing the leaves to soften.
  5. Combine the Rice and Gondeure: Once the rice is cooked, gently fluff it with a fork. Add the sautéed gondeure mixture to the rice, along with soy sauce, salt, and sesame seeds. Stir everything together to combine well.
  6. Optional Add-ins: If you like a bit of spice, you can stir in some gochugaru (Korean red pepper flakes) for a slight heat and color.
  7. Serve: Serve the Gondeure Bap warm as a side dish or with other Korean dishes like kimchi, grilled meats, or fish.
