Onigiri with Spicy Tuna

Onigiri, or Japanese rice balls, are a traditional comfort food often enjoyed as a snack or light meal. These rice balls are typically filled with a variety of savory ingredients, and in this version, they’re filled with spicy tuna. The combination of tender rice and spicy tuna filling, wrapped in a sheet of nori (seaweed), creates a perfect balance of flavors. This easy-to-make yet satisfying dish is great for lunch, picnics, or a snack on-the-go.

Ingredients:

  • 2 cups cooked short-grain rice (preferably day-old rice)
  • 1 tablespoon sesame oil
  • 1/2 teaspoon salt
  • 4-6 sheets nori (seaweed)

For Spicy Tuna:

  • 1 can (5 oz) tuna, drained
  • 2 tablespoons mayonnaise
  • 1 tablespoon sriracha sauce (or more for heat)
  • 1 teaspoon soy sauce
  • 1/2 teaspoon sesame oil
  • 1 teaspoon lemon juice
  • 1/4 teaspoon garlic powder
  • 1 teaspoon chopped green onions (optional)

Directions:

  1. Prepare the spicy tuna filling:
    In a medium bowl, combine the drained tuna, mayonnaise, sriracha sauce, soy sauce, sesame oil, lemon juice, garlic powder, and green onions (if using). Mix well until the tuna is evenly coated in the spicy sauce. Taste and adjust the spice level by adding more sriracha if desired. Set aside.
  2. Prepare the rice:
    In a large bowl, mix the cooked rice with sesame oil and salt. The rice should be slightly sticky, which makes it easier to form the rice balls.
  3. Shape the Onigiri:
    Wet your hands with a little water (to prevent sticking) and take a small portion of rice (about 1/4 cup). Flatten the rice slightly in your hand and place about 1 tablespoon of the spicy tuna filling in the center. Carefully mold the rice around the filling, forming a triangle or oval shape. Repeat with the remaining rice and spicy tuna.
  4. Wrap with nori:
    Once the rice balls are shaped, cut the nori sheets into halves or quarters, depending on the size of the rice balls. Wrap each onigiri with a strip of nori, leaving one side open for easy handling.
  5. Serve:
    Serve the onigiri immediately, or wrap them in plastic wrap for later use. They can be enjoyed as a snack, part of a lunch, or even as a fun addition to a bento box.

The combination of savory rice and spicy tuna creates a satisfying, flavorful bite, making these onigiri a delightful dish that’s perfect for any time of day.
