Ingredients (Serves 6-8):

Base:

  • 12 small slices of baguette (or crackers/puff pastry bases)
  • 2 tbsp olive oil (optional for toasting bread)

Spread:

  • 4 oz (120g) cream cheese or goat cheese
  • 1 tsp lemon juice
  • Salt and pepper to taste

Toppings (choose your favorites or mix them up):

  • 2 oz smoked salmon, cut into small pieces
  • 6 cherry tomatoes, halved
  • 2 oz prosciutto or thinly sliced ham
  • 1 small cucumber, thinly sliced
  • Capers, olives, or fresh herbs (like dill, parsley, or chives) for garnish

Directions:

  1. Prepare the Base:
    • If using bread, lightly brush the slices with olive oil and toast them in a preheated oven at 375°F (190°C) for about 5 minutes, until golden and crisp. Let cool.
  2. Make the Spread:
    • In a small bowl, mix cream cheese (or goat cheese) with lemon juice, salt, and pepper until smooth.
  3. Assemble the Canapés:
    • Spread a thin layer of the cheese mixture onto each base.
    • Add your chosen toppings (e.g., smoked salmon with a sprig of dill, prosciutto with a slice of tomato, cucumber with capers).
  4. Garnish and Serve:
    • Add a final touch with herbs, olives, or microgreens. Arrange on a platter and serve immediately.
