Buckwheat blinis are a traditional Russian-style pancake with a nutty flavor and soft texture. This recipe pairs them with a vibrant, creamy beetroot mousse, creating a stunning appetizer or party dish. The earthy blinis perfectly complement the subtly sweet and tangy beetroot mousse, topped with optional garnishes like dill, smoked salmon, or crème fraîche for an elegant presentation.
Ingredients:
For the Blinis:
- 1 cup buckwheat flour
- ½ cup all-purpose flour
- 1 teaspoon sugar
- ½ teaspoon salt
- 1 teaspoon baking powder
- 1 large egg
- 1 cup milk (or plant-based milk)
- ½ cup water
- 2 tablespoons unsalted butter, melted (plus extra for greasing the pan)
For the Beetroot Mousse:
- 2 medium cooked beetroots (peeled and chopped)
- ½ cup cream cheese (or ricotta for a lighter option)
- 2 tablespoons sour cream or Greek yogurt
- 1 tablespoon lemon juice
- 1 garlic clove, minced (optional)
- Salt and pepper to taste
Optional Garnishes:
- Fresh dill sprigs
- Crème fraîche
- Smoked salmon slices
- Caviar
Directions:
For the Blinis:
- In a large mixing bowl, combine buckwheat flour, all-purpose flour, sugar, salt, and baking powder.
- In a separate bowl, whisk together the egg, milk, water, and melted butter. Gradually add the wet ingredients to the dry ingredients, stirring until you achieve a smooth batter.
- Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter.
- Drop small spoonfuls of batter onto the skillet to make 2-inch blinis. Cook for 1–2 minutes on each side, or until bubbles form on the surface and the edges are set. Flip and cook for another minute until golden brown. Transfer to a plate and keep warm.
For the Beetroot Mousse:
- Add the cooked beetroot, cream cheese, sour cream, lemon juice, and minced garlic (if using) to a food processor or blender. Blend until smooth and creamy.
- Season with salt and pepper to taste. Adjust the consistency with a little extra sour cream or yogurt if needed.
Assembling the Blinis:
- Spread a dollop of beetroot mousse on each blini.
- Garnish with your choice of toppings, such as dill, smoked salmon, crème fraîche, or caviar.
- Serve immediately and enjoy the vibrant flavors!
