Prawn toast with yuzu mayonnaise, coriander and mint

Prawn toast gets an elevated twist with the addition of tangy yuzu mayonnaise and fresh herbs like coriander and mint. This dish is a perfect combination of crispy, golden toast paired with succulent prawn filling, complemented by refreshing and zesty flavors. Ingredients

For the Prawn Toast:
  • 200g raw prawns, peeled and deveined
  • 2 garlic cloves, minced
  • 1 small piece of ginger (about 1 inch), grated
  • 1 spring onion, finely chopped
  • 1 egg white
  • 1 tsp sesame oil
  • 1 tsp soy sauce
  • 1/2 tsp sugar
  • 1/2 tsp white pepper
  • 4 slices of white bread, crusts removed
  • 2 tbsp sesame seeds
  • Vegetable oil for frying
For the Yuzu Mayonnaise:
  • 4 tbsp mayonnaise
  • 1 tsp yuzu juice
  • 1/2 tsp honey
  • Pinch of salt
For Garnish:
  • Fresh coriander leaves
  • Fresh mint leaves
  • Thinly sliced red chili (optional)

Directions

  1. Prepare the Prawn Mixture:
    • Place the prawns, garlic, ginger, spring onion, egg white, sesame oil, soy sauce, sugar, and white pepper in a food processor. Blend until a smooth paste forms.
  2. Assemble the Prawn Toast:
    • Spread the prawn mixture evenly over one side of each slice of bread. Sprinkle sesame seeds generously over the prawn mixture and press gently to adhere.
  3. Fry the Toast:
    • Heat vegetable oil in a deep skillet over medium heat. Fry the toast, prawn side down, for about 2–3 minutes until golden brown and crispy. Flip and fry the other side for 1–2 minutes. Remove and drain on paper towels.
  4. Make the Yuzu Mayonnaise:
    • In a small bowl, whisk together mayonnaise, yuzu juice, honey, and a pinch of salt. Adjust seasoning to taste.
  5. Serve: Enjoy this crispy, herbaceous, and citrusy delight as a standout dish at your next gathering!
